When is a marrow not a marrow …

…. when it’s an overgrown courgette! Harvest time is with us – my favourite season – berries, wood-smoke, crunchy leaves, apples and surplus crops from clients’ greenhouses! So when a bag of overgrown courgettes is donated … what to do?

This recipe went down a storm the other day – cut giant courgette into cubes  (don’t peel) fry in some olive oil until golden, while pasta is cooking, and sprinkle over a plate of spaghetti with red pesto.

Vegetarian, nutritious,  very tasty and took 10 minutes!! Love easy cooking.

p.s.  the red pesto came in a jar – no shame in that.
