Poached Pears


Sometimes, people ask if I serve deserts at Fountains Court –  a residential centre for wellbeing, disguised as a hotel  – and the answer is YES! Everyday!

The evening meal is always a choice of 2 or 3 courses and of course they are deliciously nutritious. Today I have prepared poached pears – as follows:

Lay peeled pears on their sides (leave the stalks on) in a large microwaveable dish, pour in sufficient orange juice to half cover the pears, cover and cook on medium for 3 mins. Turn the pears and repeat. Repeat this until pears are soft. Leave to cool in the juice. (No need to add any sugar.)

When cold serve with a dollop of light crème freche and toasted almonds – if you wish and maybe a small piece of chocolate brownie. OR pour over some hot melted dark chocolate and serve with a dollop of ice-cream. OR if vegan pour over soya cream, sprinkle with toasted almonds and serve with free-from chocolate brownie.
